Breakfast for one

The bread muffin and hollandaise sauce are arguably the best parts of Eggs Benedict but, surprisingly, this alternative is so good that they really aren't missed. I was always a bit skeptical of the whole avocado-for-breakfast phenomenon but I've recently been converted and honestly don't feel like my eggs are complete without a bit of avo anymore!

This really is as simple as it looks: poached eggs on a bed of avocado and smoked salmon, sprinkled with salt and pepper. Add a piece of fruit on the side (kiwi is my current favourite) and a mug of hot coffee and you're golden.

^^I'm also trying to stop drinking cow's milk so have been experimenting with almond, rice and, most recently, quinoa milk! It's actually a lot more delicious that it sounds. ^^
